WINE VARIETIES

Majority of Grenache for its exceptional fruity aromas and its roundness. Minority of Syrah, Carignan, Mourvèdre. Age of the vineyard: 25 years. Performance: 40 hl/Ha.

ROBE

Ruby red, vivid color with stunning blue reflections. Light, little accentuated leg. Medium coloring intensity.

PREPARATION

Open 30 minutes or more before degustation.

PAIRINGS

Excellent with a pissaladière ( anchovy & ognon tart ), a grilled saussage or a ripened goat cheese.

Wine specificitiesNose

First mineral & spicy nose (leather, fresh grasses, ripe garden’s tomato) which slowly evolve to strawberry and cassis.It’s freshness is supported by the rasperry liveliness who brightens the aromatic bouquet of this intense meridional pleasure wine.

Every component of the element panel ends up here, the attack is soft and silky. Overall crispy with a nice freshness, however, better not be drunk too cold !

Harvest & Winemaking

Harvested by hand at dawn, when temperatures are at their lowest, the grapes are delicately layed down in crates and then carried to the winery in order to be put in vast, the tannins extraction is slow and delicate. Nathalie Delbez prefers pigeages and relieving rather than other, less eco-friendly and respectuous methods, always sheltered from air and with total control over temperatures to avoid impurities. The alcoholic fermentation is made in a stainless steel tank, the marcs are then immersed a few days to weeks in order to extract it’s quintessence, roundness and thineness are then supported by all the power Nature could give.
